Extract chilling technology of the Nucleus Paragon pour-over brewer was researched at Coffee Excellence Center in Switzerland by Professor Chahan. Further more , many other professionals developed and tested it to bring excellence to your brewing approach.
NUCLEUS PARAGON ‘s CHILLING ROCK
Nucleus Paragon is designed to effectively extract a pour-over of any size. It is made of a metal casing that holds freezing solution liquid to increase the time the rock is frozen. The chilling rock should be at freezer temperature (below -5 degrees C) and used within 10 minutes of pulling out of the freezer, given they have reached an equilibrium frozen temperature in the freezer over time.

Resulting from years of extensive research, the tool has been scientifically proven to capture and express up to 40% more key aroma volatile molecules than an identical brew without chilling – flavour that would otherwise be lost to the environment.
Layers of innovation
The chilling rock is a core component of the Paragon. Constructed from food-grade stainless steel and coated with a layer of highly durable titanium, its spherical shape and large surface area allow for even and rapid chilling. Offering greater thermal capacity, the high-density liquid gel centre maintains colder temperatures for longer, and freezes faster than hollow or water-filled alternatives.

Enhanced flavours
Developed in collaboration with Zurich University of Applied Science (ZHAW), the Paragon Chilling Rock quickly cools down the extracted coffee as it touches the rock, locking in more flavours that would otherwise have been lost without the chilling technique.
In ZHAW’s research on volatile aroma compounds, they discovered that instantaneous cooling of the extraction would trap these compounds and result in more aromatic and flavour-rich coffees.
Optimal cooling
Unlike ordinary whiskey rocks, the Paragon Chilling Rock is specifically designed for use with coffee. They are made with titanium-coated stainless steel making them incredibly durable. Inside, these rocks are filled with a high-density liquid to keep them at the optimal temperature needed for effective extract chilling. They’re also designed to rapidly and evenly cool the coffee extraction that touches them.

No more balancing acts and makeshift stands! The Paragon Espresso Mount serves as a stable platform for the Paragon Chilling Rock and can be easily set on top of any cup. This custom mount is height-adjustable to accommodate different cups and coffee machines and is designed with anti-slip grips.
